Ingredients

Scale
  • 6 cups fresh mixed greens or baby spinach
  • 1 cup packed fresh basil leaves
  • ¾ cup packed fresh dill
  • ¾ cup packed fresh flat-leaf parsley
  • ¼ cup chopped fresh chives
  • ½ cup Greek yogurt or sour cream
  • ¼ cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh lime juice
  • 1 garlic clove, minced
  • 1 ripe avocado, sliced
  • 1 English cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • ¼ cup pumpkin seeds or sunflower seeds
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • Pinch of red pepper flakes, optional

Instructions

  1. Combine the Greek yogurt, mayonnaise, lemon juice, and lime juice in a blender or food processor.
  2. Add the minced garlic clove and pulse until smooth and well combined.
  3. Add the basil leaves, dill, parsley, and chives, then pulse until the herbs are evenly distributed throughout the dressing.
  4. Season the dressing with sea salt and freshly ground black pepper, then pulse briefly to combine.
  5. Taste the dressing and adjust seasonings as needed.
  6. Transfer the green goddess dressing to a bowl and set aside.
  7. Wash and thoroughly dry the mixed greens using a salad spinner or clean paper towels.
  8. Slice the English cucumber into half-moons.
  9. Cut the cherry tomatoes in half lengthwise.
  10. Slice the ripe avocado just before serving.
  11. Place the dried mixed greens in a large salad bowl.
  12. Add the sliced cucumber and halved cherry tomatoes to the greens.
  13. Pour about three-quarters of the prepared dressing over the greens and vegetables.
  14. Toss the salad gently until every component is lightly coated with dressing.
  15. Top the salad with the sliced avocado.
  16. Sprinkle the pumpkin seeds or sunflower seeds over the top.
  17. Serve immediately with any remaining dressing on the side.

Notes

Make the green goddess dressing up to three days in advance and store it in an airtight container in the refrigerator. Add the avocado and seeds just before serving to keep the salad fresh and crisp.
