Ingredients
- 2 pounds Carrots, fresh and firm
- 1 cup Fresh cilantro, chopped
- 3 tablespoons Lime juice, fresh
- 3 cloves Garlic, minced
- 3 tablespoons Sesame oil, toasted
- 2 tablespoons Olive oil, extra virgin
- 3 tablespoons Sesame seeds, toasted
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper, freshly ground
- 1/4 teaspoon Red pepper flakes
Instructions
- Wash two pounds of fresh carrots thoroughly under running water to remove dirt and debris.
- Peel the carrots using a vegetable peeler, creating thin, smooth surfaces for shredding.
- Shred the carrots using a box grater or food processor with the shredding attachment, then place them in a large mixing bowl.
- In a small bowl, combine three tablespoons of fresh lime juice, three tablespoons of toasted sesame oil, and two tablespoons of extra virgin olive oil.
- Stir in three minced cloves of garlic, one teaspoon of salt, one-half teaspoon of black pepper, and one-quarter teaspoon of red pepper flakes, then whisk until the salt dissolves completely.
- Pour the prepared dressing directly over the shredded carrots and add one cup of fresh chopped cilantro.
- Toss everything together using two wooden spoons or salad tongs, ensuring the dressing coats every strand of carrot.
- Sprinkle three tablespoons of toasted sesame seeds over the top and toss one final time to incorporate.
- Let the salad rest for five minutes before serving to allow flavors to meld.
Notes
Chef Tips: Use a microplane or box grater to create thin, uniform carrot shreds. Always use fresh-squeezed lime juice. Toast sesame seeds yourself in a dry skillet over medium heat for 2 to 3 minutes before using. Add the dressing while carrots are still warm if possible. Don’t skip the 5-minute resting period. Store in an airtight container in the refrigerator for up to 4 days, keeping sesame seeds separate until serving to maintain crunch.
