Ingredients
Scale
- 8 oz block Feta Cheese (ensure solid block in brine for best melting)
- 2 pints Cherry Tomatoes (or grape tomatoes)
- 1/2 cup Extra Virgin Olive Oil
- 4 cloves Garlic (minced or smashed)
- 12 oz Pasta (cavatappi or fusilli)
- 1/2 cup Fresh Basil
Instructions
- Preheat your oven to 400 degrees Fahrenheit to ensure even roasting.
- Place the block of feta in the center of a glass baking dish and arrange the cherry tomatoes around it.
- Drizzle generous amounts of olive oil over the cheese and tomatoes, and season with salt, pepper, and dried oregano.
- Bake for 35 minutes until the tomatoes are blistered and the cheese is soft.
- Remove the dish carefully from the oven to prevent burning.
- Mash the softened feta and tomatoes with a fork, then stir the mixture vigorously until creamy and uniform throughout.
- Cook your chosen pasta in salted boiling water according to package directions, then drain while reserving a small amount of cooking water.
- Toss the cooked noodles directly into the baking dish with your sauce, mixing until thoroughly coated.
Notes
Reserve a splash of starchy pasta water to thin out the sauce if it becomes too thick after mixing. Ensure you use a block of feta rather than pre-crumbled varieties, as pre-crumbled feta prevents a smooth melt. Store leftovers in an airtight container in the refrigerator for 3 to 4 days, or freeze for up to 1 month.
