Ingredients
1 lb beef chuck roast or ground beef (70-85% lean)
4 cups unsalted beef broth
1 large yellow onion (about 1.5 cups chopped)
1 clove garlic, minced
1 tsp dried thyme
1 bay leaf
Salt and pepper to taste
1 tbsp olive oil (for browning)
Optional: 2 tbsp tomato paste (for extra depth)
Instructions
Brown beef in olive oil in a skillet until lightly seared
Transfer beef to crockpot and add onions
Pour in beef broth, season with garlic, thyme, bay leaf, salt, and pepper
Cook on low for 6-8 hours
Remove bay leaf before serving
Notes
Browning beef enhances umami flavor
For extra low carbs, use onion greens instead of onion bulb
Tomato paste is optional but adds depth
Serves well with cauliflower rice or keto-friendly bread
