Ingredients

4 boneless skinless chicken breasts
1/2 cup sun-dried tomatoes in oil
1/2 cup heavy cream
1/2 cup grated parmesan cheese
3 garlic cloves, minced
2 tbsp olive oil
2 tbsp unsalted butter
1 tbsp Italian seasoning
1 cup fresh spinach
Salt and black pepper to taste

Instructions

Preheat oven to 375°F (190°C)
Heat olive oil and butter in a skillet over medium-high heat
Sear chicken breasts 3-4 minutes per side until golden
Remove chicken and sauté garlic in remaining oil 1 minute
Add sun-dried tomatoes (reserve oil), cream, parmesan, and Italian seasoning
Simmer 5 minutes, stirring until thickened
Return chicken to skillet, add spinach, and bake 10-12 minutes
Season with salt and pepper before serving

Use halal parmesan or nutritional yeast for non-dairy option
Reserve sun-dried tomato oil to enhance cream sauce
