Ingredients
1 lb lean ground turkey
4 large bell peppers, halved and seeds removed
1/2 cup diced onion
2 cloves garlic, minced
1 cup riced cauliflower
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1 tsp ground cumin
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil
Instructions
Preheat oven to 375°F (190°C)
Heat olive oil in a skillet, cook turkey, onion, and garlic until browned
Stir in cauliflower, cumin, oregano, salt, and pepper; cook 5 minutes
Stuff bell pepper halves with turkey mixture
Top with cheddar and mozzarella cheese
Bake 30-35 minutes until peppers are tender and cheese is golden
Let rest 5 minutes before serving
