Ingredients
1 ½ cups fresh strawberries, hulled
1 cup heavy cream
4 tablespoons powdered erythritol
1 teaspoon pure vanilla extract
1 teaspoon fresh lemon juice
Instructions
Prep a popsicle mold by placing the sticks in each cavity.
In a blender, puree the strawberries until smooth.
Add the heavy cream, powdered erythritol, vanilla extract, and lemon juice. Blend until fully incorporated and smooth.
Pour the mixture into the popsicle mold, filling each cavity completely.
Freeze for at least 4 hours or until solid.
Remove popsicles from the mold by gently twisting the sticks and pull out the sticks.
Store leftovers in a sealed container in the freezer.

Use fresh strawberries for maximum flavor and antioxidants.
Ensure the molds are airtight for storage.
For a more intense flavor, add a pinch of sea salt.
