Ingredients
2 lbs boneless, skinless chicken breasts
8 oz cream cheese
4 cups fresh spinach
3 garlic cloves, minced
4 cups low-sodium chicken broth
1 tsp dried thyme
1 tsp garlic powder
1 tsp onion powder
1 bay leaf
Salt and pepper to taste
Instructions
Pat chicken dry and season with salt, pepper, thyme, garlic powder, and onion powder
Place chicken in the slow cooker
Add minced garlic, chicken broth, and bay leaf
Cover and cook on low for 4 hours
Remove chicken, shred it, and return to the slow cooker
Stir in cream cheese until melted and smooth
Add spinach and cook for 15-20 minutes until wilted
