Ingredients
1.5 lbs boneless, skinless chicken breasts
2 cups diced bell peppers (assorted colors)
1 cup chopped onion
3–4 garlic cloves, minced
2 cups low-sodium chicken broth
1/2 cup cream cheese (room temperature)
1 tbsp Italian seasoning
1 tsp sea salt
1/2 tsp black pepper
Instructions
Combine all ingredients in a slow cooker.
Stir to mix well.
Cook on Low for 4 hours or High for 2 hours.
Once tender, use an immersion blender for a smooth texture (optional).
Season with additional salt and pepper to taste.
Spoon into bowls and serve warm.
Notes
For a lighter version, substitute 1/4 cup water for 1/4 cup broth.
Top with shredded cheddar or fresh parsley if desired.
Store leftovers in an airtight container in the refrigerator for up to 4 days.
