2 lbs bone-in, skin-on chicken thighs
3 large yellow onions, sliced
4 cloves garlic, minced
4 cups beef broth (low-sodium recommended)
1 tbsp dried thyme
2 tbsp olive oil
1 tbsp unsalted butter
1 tsp salt
1 tsp black pepper
Instructions
Pat chicken dry with paper towels
In a skillet, heat olive oil and butter over medium heat (optional step for caramelized onions)
Sauté onions until softened (5-7 minutes), then transfer to slow cooker
Add chicken thighs, garlic, broth, thyme, salt, and pepper to the slow cooker
Cook on low for 6-7 hours or high for 3-4 hours
Let rest 10 minutes before serving
