Ingredients
1 (4 to 5 lb) whole chicken
2 tablespoons olive oil
1 tablespoon unsalted butter
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
1½ teaspoons sea salt
1 teaspoon black pepper
1 teaspoon garlic powder
½ teaspoon dried oregano
Instructions
Preheat oven to 450°F (230°C).
Place the chicken breast-side down on a clean work surface. Using kitchen shears, cut along both sides of the backbone, removing it. Flip the chicken breast-side up, and push down on the breastbone to flatten it.
In a small bowl, mix together the olive oil, rosemary, thyme, sea salt, black pepper, garlic powder, and oregano.
Rub the olive oil and herb mixture all over the flattened chicken, including under the skin if possible. Spoon the melted butter over the chicken for added richness.
Place the chicken on a large baking tray or in a roasting pan, skin side up. Bake for 55 minutes to 1 hour, or until the skin is golden and crispy, and the internal temperature reaches at least 165°F (75°C) in the thickest part of the breast and thigh.
Let the chicken rest for 10–15 minutes before carving and serving.
Notes
For optimal crispiness, ensure the oven rack is on the middle or upper-middle position during roasting.
If using a meat thermometer, insert it into the thickest part of the chicken near the leg to check for doneness.
For extra flavor, you can place quartered garlic cloves or onion slices underneath the chicken before roasting.
