1 1/2 cups almond flour
1/2 cup butter, softened
2 large eggs
1 cup cream cheese, softened
1/4 cup keto-friendly sweetener (erythritol or stevia)
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1/4 teaspoon salt
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Combine almond flour, salt, butter, and eggs in a bowl until a smooth dough forms.
Roll dough to 1/8-inch thickness on a floured surface. Spread cream cheese mixture (blend with sweetener, lemon juice, zest, and salt).
Roll tightly into a log, slice into 12 pieces, and place on prepared sheet.
Bake for 20-22 minutes until golden brown and golden. Let cool before serving.
Notes
Chill dough for 15 minutes before rolling for easier shaping
Swap erythritol or stevia with monk fruit sweetener if desired
Store in an airtight container for up to 3 days
