Ingredients
4 large eggs
1 small zucchini (about 300g), grated and drained
4 slices halal or plant-based deli meat (turkey or other non-pork alternative)
1/4 cup shredded cheese (mozzarella or cheddar), nutritional facts optional
1 tablespoon olive oil or avocado oil
1 teaspoon fresh chives, finely chopped (or 1/2 teaspoon dried)
Salt and pepper to taste
Instructions
Preheat skillet over medium heat and add oil
Add grated zucchini and sauté 2-3 minutes until tender; season with salt and pepper
Whisk eggs in a bowl, then pour into skillet with zucchini
Top with deli slices, cheese, and chives
Cook 3-4 minutes until eggs set, then roll up carefully
Slice into 4 servings
Notes
Use paper towels to press zucchini for less moisture
Freeze rollups flat on baking sheet before storage
