Ingredients
4 bone-in skin-on chicken thighs
3 tablespoons olive oil
3 cloves garlic, minced
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 cup fresh basil, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
Instructions
Pat chicken thighs dry and season with salt and pepper
In a bowl, whisk olive oil, garlic, lemon juice, lemon zest, basil, oregano, and red pepper flakes
Marinate chicken for at least 15 minutes (30 minutes optimal)
Preheat grill to medium-high heat
Grill thighs skin-side down 8-10 minutes, until golden and crispy. Flip and cook 8-10 minutes more, until internal temperature reaches 165°F
Notes
For best results, marinate at room temperature near the grill
Use a meat thermometer to ensure doneness without overcooking
Leftovers can be stored in an airtight container for up to 3 days
Substitute 1/4 cup fresh sage for basil if desired
Marinate up to 6 hours without over-tenderizing
