1/4 cup chopped peanuts or crushed peanuts (optional for texture)
Coconut flour or almond flour for dusting (optional, to prevent sticking)
Instructions
Combine the Greek yogurt, peanut butter, erythritol, vanilla extract, and salt in a medium bowl and stir until smooth.
Fold in the ground almonds and chopped peanuts (if using) for texture.
Using a small cookie scoop or spoon, form the mixture into 18 small bite-sized balls.
Place the bites on a parchment-lined baking sheet, spacing them apart to prevent sticking.
Freeze for at least 2 hours or until firm.
Once set, transfer the bites to an airtight container or freezer-safe bag and store in the freezer until ready to enjoy.

Store in an airtight container in the freezer for up to 3 months.
For easier handling, lightly dust your hands or a rolling pin with coconut flour or almond flour to avoid sticking.
Use a mini muffin tin lined with silicone cups as an alternative to forming individual bites.
