1 lb ground turkey sausage
2 medium zucchinis (about 3 cups diced)
1 can (28 oz) diced tomatoes
1 small onion (finely chopped)
3 cloves garlic (minced)
2 cups low-sodium chicken broth
1 tsp Italian seasoning
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp olive oil (optional)

Instructions

Heat olive oil in a skillet (if using). Brown the turkey sausage; transfer to crockpot.
Add chopped onion and garlic to crockpot; cook 5 minutes.
Stir in zucchini, diced tomatoes, chicken broth, Italian seasoning, smoked paprika, salt, and pepper.
