Ingredients
2 pounds ground chicken (skinless)
1 cup fresh spinach, finely chopped
1/2 cup almond flour
1/2 cup parmesan cheese (grated)
2 large eggs
1 tablespoon garlic powder
1 tablespoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
Optional glaze: 1/2 cup fresh breadcrumbs made from ground almonds and olive oil
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, combine ground chicken, chopped spinach, almond flour, parmesan, eggs, garlic powder, onion powder, salt, and pepper
Mix thoroughly until well combined
Pour olive oil into a 9×5-inch loaf pan and spread evenly
Transfer chicken mixture into the pan and shape into a loaf
Bake for 45 minutes
For optional glaze, mix additional parmesan with herbs in a bowl and gently press onto the top of the meatloaf before baking
Let rest for 10 minutes before slicing
Notes
Use ground chicken with 90% lean for optimal juiciness
The optional glaze enhances texture and flavor
Store leftovers in an airtight container in the fridge for up to 4 days
Freeze for 2-3 months by slicing and wrapping individual portions
Replace parmesan with nutritional yeast for a dairy-free alternative
