4 boneless, skinless chicken breasts (6 oz each)
1/2 cup crumbled goat cheese (about 3 oz)
2 tablespoons olive oil
2 cloves garlic (minced)
1 teaspoon fresh thyme leaves
1 teaspoon sea salt
Freshly ground black pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Pat chicken breasts dry and season both sides with sea salt, black pepper, garlic, and thyme
Evenly distribute goat cheese over the top of each breast
Drizzle olive oil over the chicken and goat cheese
Transfer to an oven-safe baking dish
Bake for 20 minutes until chicken reaches 165°F internal temperature
Let rest for 5 minutes before serving
