Ingredients
2 lbs bone-in, skin-on chicken thighs
1 bunch radishes, trimmed and halved
4 cups sugar-free chicken broth
1 medium yellow onion, finely diced
4 cloves garlic, minced
2 tbsp olive oil
1 tsp dried thyme (or 3 fresh sprigs)
1 bay leaf
Instructions
Pat chicken thighs dry and season with salt and pepper
Heat oil in a Dutch oven over medium-high
Sear chicken thighs skin-side down until golden (5-7 min), flip and sear 3-4 min
Add onions, garlic, and thyme; sauté 5 min until softened
Deglaze with broth, scraping up browned bits
Bring to a boil, reduce to simmer, and cook 20 min
Add radishes, simmer another 10 min until tender
Notes
Chicken bones enrich broth naturally
Adjust thyme quantity to taste
Let stew rest 5 min before serving to thicken
