Ingredients
12 large eggs
2 cups heavy cream
8 oz fresh spinach, chopped
4 oz mozzarella cheese, shredded
1 cup mushrooms, sliced
1 cup bell peppers, diced
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp unsalted butter
Instructions
Preheat oven to 375°F (190°C)
In a large bowl, whisk eggs with heavy cream, salt, pepper, and minced garlic
Add chopped spinach, sliced mushrooms, bell peppers, and sautéed butter until fragrant
Transfer mixture to a greased 9-inch baking dish
Sprinkle shredded mozzarella evenly over the top
Bake for 35 minutes until golden and set
Let rest for 10 minutes before slicing into 8 portions
Notes
Substitute mozzarella with cheddar or feta if preferred
Use plant-based sausage or turkey as a non-pork protein alternative
Store leftovers in an airtight container for up to 3 days
Flavors improve after 6-8 hours of refrigeration overnight
