Ingredients
1.5 lbs beef sirloin or chuck tips
2 cups beef broth (low sodium)
1 cup heavy cream
8 oz mushrooms, sliced
1 medium onion, diced
3 cloves garlic, minced
2 tbsp butter (grass-fed)
1 tsp xanthan gum
1 tsp Dijon mustard
1 tbsp Worcestershire sauce
1 tsp dried thyme
1/2 tsp dried rosemary
Salt and pepper to taste
Instructions
Preheat oven to 300°F (150°C)
Heat 1 tbsp butter in a Dutch oven over medium-high heat
Brown beef tips in batches, 2-3 minutes per side, transferring to a bowl
Sauté onions, garlic, and mushrooms in remaining butter until softened
Deglaze pan with beef broth, scraping up browned bits
Return beef to the pot and add thyme, rosemary, and Dijon mustard
Bring to a simmer, cover, and transfer to oven for 20 minutes
Stir in xanthan gum and heavy cream, simmer 5 more minutes until thickened
Season with salt and pepper to taste
