- 3 pounds boneless, skinless chicken breasts
- 1 cup mayonnaise

Instructions
- Place three pounds of boneless, skinless chicken breasts in a large pot and cover with cold water.
- Bring water to a boil over medium-high heat, then reduce heat to medium and simmer for 12 to 15 minutes until chicken reaches 165°F internally.
- Remove chicken with a slotted spoon and place on a clean cutting board to cool completely, approximately 10 minutes.
- Once cooled, dice the chicken into bite-sized pieces, roughly 1/2-inch cubes.
- Boil three large eggs in simmering water for exactly 10 minutes until fully cooked, then cool completely in ice water before peeling and chopping.
- Wash and finely dice one cup of fresh celery and 1/2 cup of red onion into uniform pieces.
- Pour one cup of mayonnaise into a large mixing bowl, then add the cooled, diced chicken and fold gently.
- Stir in the diced celery, red onion, chopped hard-boiled eggs, and 1/4 cup of dill pickle relish.
- Sprinkle one teaspoon of salt, 1/2 teaspoon of black pepper, 1/4 teaspoon of paprika, and one tablespoon of lemon juice over the mixture.
- Use a rubber spatula to fold all ingredients together gently until evenly distributed, then taste and adjust seasonings as needed.
Notes
Chill the chicken salad for at least two hours before serving to allow flavors to meld together and create a deeper taste profile. Store in an airtight container in the refrigerator at 40°F or below for 3 to 4 days.
