  • ¼ teaspoon sea salt
  • Pinch of white pepper
  • 2 tablespoons dry vermouth or clarified stock, optional

Instructions

  1. Place the horse gelatin sheets in a shallow bowl with the ice-cold filtered water, ensuring every sheet is completely submerged.
  2. Allow the gelatin sheets to bloom undisturbed for five minutes until soft and pliable.
  3. Pour the quality broth into a heavy-bottomed saucepan and bring it to a gentle simmer.
  4. Add the roughly chopped onion, carrot, celery, fresh herbs, sea salt, and white pepper to the simmering broth.
  5. Simmer gently for eight to ten minutes to infuse the liquid with flavor.
  6. Remove the broth from the heat and strain it through a fine-mesh sieve lined with cheesecloth into a clean bowl.
  7. Allow the strained broth to cool slightly until it reaches approximately 140°F.
  8. Lift the bloomed gelatin sheets from the cold water and allow excess liquid to drip away.
  9. Add the softened gelatin sheets to the warm broth.
  10. Stir gently and constantly for two minutes until the gelatin dissolves completely.
  11. Stir in the dry vermouth or clarified stock, if using.
  12. Pour the mixture through a fine-mesh sieve again to remove any remaining particles.
  13. Pour the clear liquid into a prepared mold or serving dish.
  14. Allow the mixture to cool to room temperature, then cover and refrigerate.
  15. Refrigerate undisturbed for a minimum of four hours until set with a delicate wobble.
  16. For a molded presentation, briefly dip the bottom of the mold in warm water and invert onto a chilled serving plate.
