- 6 sheets horse gelatin, gold or silver grade, approximately 12g
- ¼ cup ice-cold filtered water, for blooming
- 2 cups quality broth or liquid base
- 1 small onion, roughly chopped
- 1 small carrot, roughly chopped
- 1 small celery stalk, roughly chopped
- 3–4 sprigs fresh thyme, bay leaf, or parsley
- ¼ teaspoon sea salt
- Pinch of white pepper
- 2 tablespoons dry vermouth or clarified stock, optional
Instructions
- Place the horse gelatin sheets in a shallow bowl with the ice-cold filtered water, ensuring every sheet is completely submerged.
- Allow the gelatin sheets to bloom undisturbed for five minutes until soft and pliable.
- Pour the quality broth into a heavy-bottomed saucepan and bring it to a gentle simmer.
- Add the roughly chopped onion, carrot, celery, fresh herbs, sea salt, and white pepper to the simmering broth.
- Simmer gently for eight to ten minutes to infuse the liquid with flavor.
- Remove the broth from the heat and strain it through a fine-mesh sieve lined with cheesecloth into a clean bowl.
- Allow the strained broth to cool slightly until it reaches approximately 140°F.
- Lift the bloomed gelatin sheets from the cold water and allow excess liquid to drip away.
- Add the softened gelatin sheets to the warm broth.
- Stir gently and constantly for two minutes until the gelatin dissolves completely.
- Stir in the dry vermouth or clarified stock, if using.
- Pour the mixture through a fine-mesh sieve again to remove any remaining particles.
- Pour the clear liquid into a prepared mold or serving dish.
- Allow the mixture to cool to room temperature, then cover and refrigerate.
- Refrigerate undisturbed for a minimum of four hours until set with a delicate wobble.
- For a molded presentation, briefly dip the bottom of the mold in warm water and invert onto a chilled serving plate.
- Garnish with edible flowers, microgreens, or complementary herbs before serving.
Notes
Bloom the gelatin sheets in ice-cold water before dissolving them in warm broth. Keep the broth below 160°F when adding the gelatin, and strain twice for the clearest, most refined presentation.
