Instructions

- Refrigerate for 1 hour until the mixture reaches a pudding-like consistency but is still moveable.
- Remove from the refrigerator.
- Fold in 1 cup fresh raspberries gently with a spatula.
- Stir in ½ cup light coconut milk to create a marbled effect.
- Return the bowl or cups to the refrigerator.
- Chill for 2 to 3 more hours until completely firm.
- Check firmness by inserting a spoon near the edge.
- Divide into 6 equal servings.
- Garnish with a fresh raspberry, extra lemon zest, or a small drizzle of coconut milk if desired.
