- 1½ cups mixed fresh berries
- ½ cup light coconut milk
Instructions
- Pour the filtered water into a saucepan and bring it to a gentle boil over medium heat.
- Remove the saucepan from the heat and add the unflavored gelatin powder.
- Whisk continuously for two minutes until the gelatin is completely dissolved.
- Stir in the fresh lemon juice and raw honey until fully incorporated.
- Add the minced fresh ginger and stir well, allowing it to infuse for one minute.
- Pour in the light coconut milk and stir slowly until the mixture is smooth and evenly combined.
- Allow the mixture to cool for approximately three minutes at room temperature.
- Gently fold in the mixed fresh berries until evenly distributed.
- Pour the mixture into individual serving cups or one large glass container.
- Refrigerate for at least four hours, or overnight for the firmest texture.
- Check that the gelatin is set and holds its shape with a gentle wobble.
- Serve chilled directly from the refrigerator.
Notes
For the smoothest texture, dissolve the gelatin completely without boiling it after addition. Store covered portions in the refrigerator and serve chilled.
