- 1 cup (8 ounces) cottage cheese, 2% or full-fat
- 6 ounces dark chocolate, 70% cocoa, finely chopped
- 4 ounces (1 stick) unsalted butter
- 3 large eggs, room temperature
- 3 tablespoons all-purpose flour
- ⅓ cup granulated sugar
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
- 1 tablespoon butter, for greasing ramekins
Instructions
- Preheat the oven to 425°F and position the rack in the center.
- Generously butter four 4-ounce ramekins, covering the bottoms and sides completely.
- Blend the cottage cheese in a food processor for approximately two minutes until completely smooth.
- Place a heat-safe bowl over simmering water to create a double boiler.
- Add the chopped dark chocolate and unsalted butter to the bowl.
- Stir frequently until the chocolate and butter are completely melted and smooth.
- Remove the chocolate mixture from the heat and cool for approximately two minutes.
- Stir the vanilla extract and salt into the melted chocolate mixture.
- Whisk the eggs together in a separate bowl.
- Slowly add the eggs to the chocolate mixture while stirring constantly.
- Add the blended cottage cheese and fold gently until no streaks remain.
- Sift the flour over the batter and fold gently until just combined.
- Divide the batter evenly among the prepared ramekins, filling each approximately two-thirds full.
- Place the ramekins on a baking sheet.
- Bake for 12 to 13 minutes, until the edges are set but the centers still jiggle slightly.
- Remove the ramekins from the oven and let them rest for one minute.
- Invert onto serving plates or serve directly from the ramekins.
- Dust with cocoa powder before serving.
Notes
Blend the cottage cheese until completely smooth for the silkiest texture. Watch the cakes carefully at 12 minutes and remove them once the edges are set but the centers still jiggle to preserve the molten chocolate middle.
