Instructions

  1. Heat a large skillet or wok over medium-high heat without adding oil.
  2. Add the minced garlic and fresh ginger, stirring constantly for 30 seconds until fragrant.
  3. Add the shredded cabbage and julienned carrots to the pan.
  4. Pour in the water and low-sodium soy sauce.
  5. Cook for 5 to 7 minutes, stirring occasionally, until the vegetables are tender but still slightly crisp.
  6. Remove the pan from the heat and stir in the sesame oil, chopped green onions, white pepper, and salt.
  7. Spread the vegetable filling on a plate and allow it to cool for 10 minutes.
  8. Place one spring roll wrapper on a clean, dry surface with one corner pointing toward you.
  9. Position approximately 2 tablespoons of cooled filling on the lower third of the wrapper.
  10. Fold the bottom corner over the filling and roll tightly away from you.
  11. Fold the left and right corners inward, then continue rolling until completely sealed.
  12. Place the sealed roll seam-side down on a plate and repeat with the remaining wrappers and filling.
  13. Allow the assembled rolls to rest for 5 minutes.
  14. Preheat the air fryer to 375°F for 3 minutes.
  15. Lightly spray all sides of each roll with cooking oil.
  16. Arrange the rolls in the air fryer basket in a single layer without overlapping.
  17. Air-fry for 12 to 15 minutes, shaking the basket halfway through cooking.
